Daftmill

One of Scotland's newest and smallest malt whisky distilleries, Daftmill is set in the heart of Fife. The distillery uses its own barley and sparkling water from its artesian well to produce the finest of single malt whiskies.

The Whisky

The whisky is distilled solely in the farming off-season – two months in summer and two months in winter. This is a very traditional way of running a distillery that hasn’t been seen in Scotland since the 1800s.

Small Batch

Daftmill is also one of Scotland’s smallest distilleries by output, distilling only 20,000 litres of pure alcohol (LPA) – about 100 casks – per year.

Established in 2005

Although established in 2005, and despite having over 10 years' worth of stock, Daftmill didn't release a single bottle of whisky until 2018.

The Distillery

Daftmill is one of just nine distilleries in the Lowlands; it released its first whisky in 2018. It operates as a true farm distillery, using barley farmed on the estate and water from its own natural spring. Daftmill’s single malts are aged for at least 10 years, and demand far exceeds those 100 or so casks per year.

The name Daftmill comes from the seemingly “daft” burn – or stream – on the farm that appears to run uphill; over time the mill on said stream took on its name, becoming known as “Daft Mill”.

Daftmill Releases

Daftmill is situated in the Howe of Fife near to the Bow of Fife. It sits in the fertile valley of the River Eden in the Parish of Collessie.

Famed Victorian whisky writer Alfred Barnard, while travelling through Fife to the Auchtermuchty distillery in 1865, wrote this of the countryside:

"After leaving Kirkcaldy we lost sight of the busy Forth and the country began to assume a character that bespoke a fertile soil and a high state of cultivation. The country slopes gently from the Ochils to the River Eden but the East Lomond forms the finest object in the surrounding landscape. It is a regular and beautiful mountain, 1650 feet high, with a cairn on the top.”
